NT3724351I have decided to return to the land of recipe blogs!!  I realized that I missed posting on Country Girl Recipes.  So, I have returned with some new recipes that  I think you will enjoy.  Rules are the same as before ( :) ) : if you use a recipe on that’s on there I would love to hear from you to know if you have made any changes to it or just to let me know that you liked it or not!  God bless you and happy cooking!


The Plan is still on! Sorta.

YAY! So the plan is that we are hopefully still going up to NY, but just later than planned. Two days later. But I don’t really care! I’m just glad that we may still be able to spend Christmas with our family. It does mean however that Rebekah and I won’t get the chance to see eachother.

42-20135452Instead of celebrating with just the five six of us today like we were going to ,  we will now be celebrating tomorrow. Mom and I were up until 12:30am yesterday trying to get all of our presents wrapped. I think everything did, except the stocking gifts. 

Today I am going to be making sugar cookies for our new neighbors that just moved in yesterday. And we will also be giving some to our other neighbors and I’M SURE we will be keeping some for ourselves 🙂 .

I’m still here! :)

Hello! I’m still here 🙂 .  Today is official update day! Yay! Okay, so here it goes…


My walk with the Lord is really going great. Everyday I am feeling refreshed and also down. Down because the Lord has been revealing some areas in my life that need some pruning, and refreshed because I know that in the long run it is bringing me closer to Him. Praise the name of Jesus!


Dad, John Follman and I are now in our new office space! I’m out of my basement corner! Yippee! haha. I really like the office; it has a nice feel to it.


 My not forgotten pregnant mother is doing very well. We found out that she will be having a scheduled C-Section in the last week of August. Not too much longer! Time is going by so fast. Not long ago she had her glucose test and everything came back with fine results. The baby is now approximately 17 inches long and around 3 pounds! Please forgive me for not having a picture of Mom on this post right now, but check back later today or tomorrow to see if I have edited this post with a pic. 🙂


Jeremiah is going to be starting back to physical and speech therapy soon.


I don’t understand how I could start losing inches before weight, but that is exactly what happened this week. I have lost 1/4 inch all over and I know that is not very much, but it really is encouraging! 

 Current Weight: 127 lbs.

Goal weight: 118-120 lbs.

Lbs. I need to lose to get to that weight: 7-9

Pounds lost since June 10, 2008: 0  

Inches lost since June 10, 2008: 1/4 🙂

Is it breakfast, or dinner?

This evening we had a very simple, but nice dinner. Mom made waffles!  Breakfast food is probably my most favorite food to eat (except for ice cream!) so tonight was right up my alley 🙂 ! They were a nice change, although I almost always enjoy whatever my Mom makes. John had chocolate chips in his, the rest of us had some with blueberry filling on top and  some with just plain butter and maple syrup. Yummm! They were also very simple to make, because the mix was from a box 🙂 . They tasted homemade though.

Flourless Peanut Butter Cookies

 Flour-less? Yup! It’s true! I received this recipe from a great friend of ours, Mrs. Rotoli (the mother of Andrew Rotoli- my brother John’s best friend. Their blog is ). She’s allergic to the gluten in flour so she makes these yummy cookies for her self when she wants a treat. Last week I made a batch for her and for us. They are really good. Very peanut buttery!  Below is a picture that I took of my cookies and below it is the recipe. Enjoy!


 ~ Easy Peanut Butter Cookies ~

 From the kitchen of Shari Rotoli

1 Cup Peanut Butter

1 Cup sugar

1 Egg, Beaten

1 tsp. Vanilla

No flour!

Recipe Instructions:

 Stir all ingredients together until well combined. Shape level TBSP. into balls. Place on ungreased cookie sheet two inches apart. Flatten with a fork. Bake 350 degrees for 16-18 (my oven is a little warmer so I only leave them in for about 14 minutes). Cool 5 minutes an remove to a cooling rack.
